Summer and Fall 2013

It's time, again, to do a little blogging again...

Since last time I blogged life has been busy, I now have two beautiful little girls to take care of and have fun with. They are both really awesome! Aeris has gotten so big, she is such an active and happy little girl, a toddler now. She is trying to learn to talk, both Norwegian and English, and has a few words down already. She practice new sounds every day. Kamilla is a very happy baby, she has put herself on a great schedule and she really loves her sister. Aeris will make her smile and laugh playing peek-a-boo with her. Well, enough talk for now, here are some pictures of my beautiful family.

February 2013

So I wrote this back in February, but never posted it apparently :P
Well, here it is now :)

We got to see 3 grandparents in February!
Started off with Grandmother (Mike's mom), then Bestefar (My dad) and then Grandaddy (Mike's father). We all had a wonderful time together!!

Pork Roast

I made a really good dinner the other day, and it turned out great! So I felt like sharing it with you guys :)



Pork Roast

You'll need:
* Pork Loin
* Sweet Potato
* Carrots
* Brussel Sprouts
* Squash/Zucchini
* Bacon
*Water
*Seasonings

Sauce:
* Butter
* Flour


Season the pork.
Cut sweet potatoes and carrots into small pieces.
Add to baking dish.
Add water. (Enough to almost cover the carrots and potatoes.)

Bake in the oven on 325F for about 1 hour (depending on how much meat there is).


 Rinse and cut zucchini and brussel sprouts into small squares.

Boil for 5 minutes. Drain. 


Cut bacon, cook. 


 Fry the zucchini and brussel sprouts in the remainding bacon fat. 

 Make sauce:

Melt 1 tbsp butter. Stir in 2 tbsp flour. 
Stir in all the water from cooking the pork.
Boil for a minute or two, stir frequently. 

 Make plates...
Cut pork into slices, add all the other ingredients to the plate. 


  
Enjoy your delicious meal :) Definitely worth trying!
